And spinach, there’s also spinach! ;)
I found this recipe on a fitness site. But seeing how most of ingredients are processed, I wouldn’t say it’s healthy, low cal, sure. HOWEVER, if you made your own meatballs from scratch using lean ground turkey or chicken and you used whole wheat tortellini it would definitely kick the nutrient value up. (This new way of thinking is all thanks to the Cameron Diaz book, I’m a changed women!)
- 1 tbsp of olive oil
- 2 garlic cloves, thinly sliced
- 1 carton of low sodium chicken broth
- 1 cup of water
- 1 package of cheese tortellini
- 20 precooked chicken meatballs
- 2 cups of fresh baby spinach leaves
- Salt & Pepper, to taste
- Parmesan cheese
1. Boil tortellini until Al dente, drain. Meanwhile, in a large pot heat the oil and garlic for about 2 minutes. Add in the chicken broth and water, bring to a boil.
2. Add in the meatballs and bring down the heat to a simmer. When the meatballs are heated through, add in the tortellini, spinach and salt and pepper. Serve immediately, garnish with fresh grated parmesan. Serves 4.
